What do the E codes on the label mean?

An E code is not a danger sign but the number of a permitted additive. Which substance it stands for, and the conditions it may be used under, are both defined.

An E code is not a danger sign but an identity number: the code set for each food additive. The regulation lists the substances that may be used one by one in two annexes and sets conditions for each of them. What carries information is not the presence of a code but which substance it stands for.
