As much energy and fat as you trim leaves the plate; how large the difference is depends on how fatty the meat was to begin with. In cooked lamb shoulder with its fat, 100 grams is 346 kilocalories, while the lean part alone is 279 kilocalories. In a beef steak that is already lean, the same comparison is 170 against 166.
