How do you set up meals on irregular work hours?

On a shift day the order comes from the sequence, not from the clock. A guide to meal counts, the packed meal, fluid tracking and the gap before sleep.

On irregular hours meals are tied not to the clock but to the sequence of the shift itself. TÜBER, Türkiye's national dietary guideline, has no section devoted to night work or shift work; but the principles of its worker nutrition section carry over to this pattern directly. The most concrete of them is this: do not load the increased energy demand onto a single meal.

Below we look at why the order is a matter of sequence rather than clock time, where the number of meals comes from, what to carry during hours with no kitchen access, how to track fluid and the gap between sleep and a meal.

There is no shift section in the guideline

This has to be said at the start, because when what you are looking for cannot be found, the gap tends to get filled with guesses. The guideline gives no separate set of recommendations for the effect of night work on nutrition.

What it does give is a framework built on line of work and energy demand. Because that framework is independent of the clock it fits a shift day too; the principles here are taken from that section.

This distinction matters, because a recommendation standing on the same page and a recommendation carried over from a completely different section should not be read with the same weight. What follows belongs to the second group.

Order means sequence, not clock time

When a fixed hour cannot be set, the order comes out of the sequence: waking, first meal, snack, main meal, end of shift. As long as the sequence stays fixed, the hours can shift.

This view also ties the different shifts of the week to a single rule. What changes between day and night weeks is the hours, not the placement of meals relative to each other. We covered the general frame of meal timing in this guide.

Not piling the load onto one meal

This is the guideline's clearest sentence: people working in heavy and dangerous jobs should not load the increased energy demand onto a single meal. At the end of a long shift, one large meal gives a different result from taking the same energy spread out.

The same section adds one more reason: at least one snack placed alongside the main meals both prevents overloading at the lunch meal and reduces the problems that can arise in people who come to work without breakfast or with an inadequate breakfast.

On a shift day this second reason becomes even more visible, because the hour a shift starts is often not the usual hour for breakfast.

How many meals

The guideline gives the number too: the number of meals should be arranged as 3 main meals and 1-3 snacks. The range is left wide, because which end you pick depends on the energy demand and the length of the shift.

The breaks themselves are part of this calculation. It is written that a snack pattern built into tea breaks affects performance and productivity positively and reduces the risk of work accidents.

When there is no kitchen access

If the workplace does not provide food, it is recommended that a packed meal be brought along. The guideline lists items one by one for the snack: as drinks, milk, ayran, lemonade, herbal teas and fruit juices; as food, sandwich varieties, cake, biscuits, poğaça, börek, fruit, walnuts, hazelnuts and dried fruit.

The practical side of the list is that none of them needs cooking. If there is no way to heat food during the night hours, the meal can be built cold and that does not count as a shortcoming.

How fluid is tracked

The guideline asks that fluid intake be provided regardless of the feeling of thirst, and gives two criteria: at least 10-12 glasses of water a day, or one liter of fluid for every 1000 kilocalories taken in.

The reason is written down too: in studies carried out in different lines of work it is stated that workers do not consume enough fluid and that this is associated with work accidents, occupational diseases and reduced work performance. This is a statement of association, not a one-way chain of cause.

The gap between sleep and a meal

For good quality sleep the guideline writes that you should stay away from stimulants such as caffeine and alcohol before sleeping and avoid heavy dishes at the last meal. In a shift pattern this means looking at the sequence rather than at the clock itself.

If you are going to sleep after coming off a night shift, the last meal is the one before that sleep, and building it light helps. In the adult nutrition section too, a regular eating habit and avoiding eating late are mentioned together.

What happens when the shift changes

The real drift is not in the shift itself but on the changeover days. Moving from one pattern to another, sleep and meals both change place at the same time, and for two days neither settles.
