How is a meal plan built in a large household?
The problem is not the menu but the portion. It covers the different needs at the same table, producing different plates from one dish, and splitting the preparation.
The real problem with a meal plan in a large household is not the menu but the portion. A child, a teenager and an adult sitting at the same table can eat the same dish; they are not expected to eat the same amount.
Below we cover how many different energy levels there can be in the same home, how the number of portions separates by food group, how different plates are produced from one dish, the way of serving, the splitting of the preparation, and the days when the hours scatter.
One menu, but not one need
Cooking a separate dish for everyone is not a routine that can be kept up in a large household; but cooking one dish does not mean everyone will take the same plate either.
The solution is looked for not in multiplying the menu but in producing plates of different sizes from the same menu. We covered the opposite problem, the single-person kitchen, in this guide.
This view also lowers the workload in the kitchen. Cooking one pot of food and building the plates separately is both shorter and more repeatable work than managing three separate pots.
How many energy levels are at the same table
TÜBER, Türkiye's national dietary guideline, builds its eating patterns between 1000 and 3200 kilocalories and matches each level with age, sex and activity. In the same home this matching can fall on levels very far from one another.
According to the table a low-active two-year-old child matches the 1000 kilocalorie pattern, while a moderately active fifteen-year-old boy matches a pattern going up to 3000 kilocalories. There is close to a threefold difference between them.
That is why there is no such thing as a single family portion. We described how a child's plate is adjusted in this tip.
In which groups the difference grows
As the energy level rises, not all groups rise in the same proportion. The milk group is 2 portions in the 1000 kilocalorie pattern and settles at 3 portions after 1800 kilocalories.
The bread and grain group is the side that opens the most; over the same range it goes from 2.5 portions up to 8 portions. The rise on the vegetable and fruit side is well below this.
The practical equivalent is this: the difference is carried not by the main dish itself but by the bread and pilaf side. That is the item to adjust when serving from the same pot.
The same distinction shows up in the shopping too. Because the difference on the bread and grain side is large, in a large household the weekly amount of these two items is calculated not directly by the number of people but together with the spread of ages at the table.
Different plates from one dish
One pot of food turns into different plates when the items put next to it are changed. The same main dish is completed with soup and salad on one plate and with pilaf and bread on another.
This adjustment is made not during cooking but at serving. Cooking the dish the same for everyone is no obstacle to building the plates differently.
The way of serving sets the portion
The guideline recommends that serving dishes not be put on the dining table. In a meal eaten from the pot or from the dish in the middle the amount is decided at the table; on a plate set aside in advance it is decided in the kitchen.
In a large household the effect of this distinction is bigger, because the second helpings taken from the dish in the middle stay invisible. The same section also recommends that food be eaten at the dining table rather than in front of the television.
On the plates of small children this adjustment asks for more care. In children under two, reduced-fat milk products and foods containing added sugar are two items the guideline sets a separate limit on; the table may be shared, but this limit is not.
How different tastes are met
The item that is not liked is usually not the whole dish but one component inside it. Leaving that component aside takes far less time than cooking a second dish.
Another way is completing the dish not on the plate but at the table: items such as onion, parsley, lemon, yogurt and pickles stand in the middle and everyone builds their own plate.
A dish completed at the table also makes it easier for everyone to decide their own portion. While the items in the middle vary the plates, the pot itself stays single.
How the preparation is split
The most concrete gain of a large household is the labor. Preparation collecting on one person stops being sustainable as the number of items grows.
The splitting is done not by splitting the dish but by splitting the steps: one person chops, one cooks, one sets the table. Doing the shopping together with the family and on a full stomach is among the guideline's recommendations too.
When the hour at the table scatters
The guideline recommends eating together with the family as far as possible; but there are days when not everyone is at home at the same hour.
On such days what is shared is not the hour but the dish. A meal eaten from the same pot at different hours can be regular too; we covered the detail in this tip.
In short: keep the menu single, build the plates separately, adjust the difference on the bread and pilaf side and do the serving in the kitchen rather than at the table. The how a weekly menu is built guide completes the whole week.
