How are dried legumes and grains used in the kitchen?
Soaking, the raw-to-cooked conversion, the measuring tool and storage are parts of one routine. This covers using both in the kitchen from start to finish.
Dried legumes and grains work by the same logic in the kitchen: both are bought dry, both take up water and grow, and the portion of both is defined over the cooked form. This is why the measure is read from the amount that reaches the plate, not from the amount that goes into the pot.
Below we look at what soaking changes, how raw weight turns into cooked weight, which tool the measure is taken with, cooking in bulk and dividing it up, storage, and which item goes into which dish.
Why the two groups are covered together
When these two groups come together in the same meal, the protein quality of that meal rises. The guideline gives direct examples: consuming chickpeas with bulgur, or kuru fasulye (white beans) with rice pilav, increases the bioavailability of the protein.
This is a pairing already established in Turkish cooking. What there is to do on the kitchen side is not to buy a new ingredient but to keep the two items in the same meal.
Using them together also simplifies the kitchen. Pilav placed beside a legume dish cooked in the same pot is a single meal design, not two separate plans.
What soaking changes
The guideline's recommendation is clear: leaving dried legumes in cold water the night before cooking and cooking them well prevents gas and digestive problems.
Soaking also evens out the cooking. Grains that have taken up water soften more evenly; in a batch that goes into the pot without soaking, the difference between grains grows.

How raw weight turns into cooked weight
The conversion is given in the guideline with a number: one standard portion of cooked dried legumes is 130 grams and corresponds to 50 grams of raw dried legumes. So the amount that goes into the pot is about a third of the amount that reaches the plate.
This ratio makes shopping easier too. A pot calculated at fifty grams raw per person is planned with a single multiplication once you know the size of the household.
Knowing the ratio also determines the choice of cooking pot. An amount that fills a quarter of the pot in dry form can take up enough room after cooking to overflow.
Which tool the measure is taken with
The kitchen equivalents of the same portion are defined as well: three quarters of a mug, eight tablespoons or two small ladles. The guideline recommends using a ladle rather than a tablespoon, for ease and accuracy in measuring.

Raw measures on the grain side
For grains the measure is given in raw weight too: the raw equivalent of one standard portion is 30 grams for rice and pasta, and 25 grams for bulgur. In cooked form this amount makes half a mug.
These numbers look small, because they describe the side dish portion. Pilav or pasta served as a second course after the main dish, on the other hand, equals two standard portions.
The same distinction shows in the pot as well. Pilav placed as a side dish and pilav placed beside the main dish are different amounts; the measure is set by how many times the ladle is dipped.
Cooking in bulk and dividing it up
The long cooking time of dried legumes is the real obstacle in front of them in the kitchen. Boiling them once and dividing them into portions removes that time for the whole week.
The dividing is done over cooked weight; containers of 130 grams make taking a measure unnecessary on the following days. We described how to do it in this kitchen note.
The divided containers can go into the freezer too. That way the long cooking time is paid once and, in the following meals, the item is used directly like a ready ingredient.
Storage and stock
The greatest advantage of grains and legumes in dry form is that they keep for a long time; this makes them a stock item. For these products, which have no defined storage temperature, the condition is a dry and well-ventilated place where the effect of sunlight and heat sources is prevented.
Order in the stock is a rule as well: first in, first out. When buying, care is taken that they are not moldy, insect-eaten or broken.
Which item goes into which dish
The guideline describes the breadth of this group in the kitchen with examples: chickpeas as leblebi (roasted chickpeas) or in soup, lentils and beans in dishes with and without meat and in zeytinyağlı pilaki (olive oil bean stew), and chickpeas and lentils together with pilav.
The same items also enrich börek fillings, salads and meze. The recommendation to eat them two or three times a week is met through this breadth, without sticking to a single kind of dish.
Not pouring away the cooking water is a kitchen habit too; the guideline recommends not pouring this water away and consuming legumes together with foods rich in vitamin C.
