How do you choose a drink and a sweet at a cafe?

Two cups with the same name are not the same thing; the difference is made by size, milk, syrup and cream. It explains how to read a cafe menu by measure.

At a cafe, two cups with the same name are not the same thing; the difference is made by the size, the milk, the syrup and the cream. TÜBER, Türkiye’s national dietary guideline, shows that difference in numbers: in a 240 mL mug, filter coffee corresponds to zero standard amounts, while a white chocolate mocha of the same volume rises to 3-3.5 standard amounts.

Below we look at what that measure means, where plain coffee stands, how milk and syrup change the cup, how a sweet item is chosen, and how a cafe routine is built.

What a standard amount means

In the guideline’s table of optional choices the unit of measure is set: one standard amount is 75 kcal, and every item is written with the number of times it corresponds to.

The table’s own note carries an important warning: these amounts are not recommended amounts, they are prepared for comparison and information. So the number is not a target but a measure that lets you put two cups side by side.

Where plain coffee stands

In the same table, 240 mL of filter coffee is listed as zero. In its plain form, coffee adds nothing from the cup itself; everything added moves the measure up.

The guideline writes this separately: if milk, cream and/or sugar have been added to tea and coffee, the energy value rises. The real information to read on a menu is not the name of the drink but what has been put on top of it.

The same rule holds for Turkish coffee and tea; when they are ordered plain, the cup does not count as an item on its own.

How milk changes the cup

The measured ranges are these: 240 mL of caffe latte is 1-1.5 standard amounts, cappuccino 0.75-1.25, caffe mocha 2-2.5, white chocolate mocha 3-3.5. Four different results come out of the same cup size.

Size is a separate variable. An iced caffe latte at 360 mL gives 1-1.5, and an iced caramel macchiato 1 standard amount. When the cup grows, what changes is not the ratio of what is in it but the total. So choosing the size comes before choosing the type of milk.

Syrup and cream

These two items stand as separate lines in the table: one pump of syrup is 0.25-1 standard amount, and extra cream added to hot or cold drinks adds 1-1.33 standard amounts.

When two pumps of syrup and cream are asked for together, the cup ends up clearly somewhere else than in its plain form. This is a decision taken in seconds while ordering and usually not noticed; yet it is what determines most of the cup.

How a sweet item is chosen

The difference among cafe sweets is bigger than among the cups. In the same table a croissant is given as 3-5, a slice of cake 6-7, a muffin 7, and a slice of cheesecake 9 standard amounts.

The distance between them shows where the choice is made: there are several times over between the smallest item and the largest, and that difference is not read directly from the size on the plate. A slice that looks small can stand higher than a product that looks large.

The guideline adds one more footnote for these products: cafe and patisserie products can contain fats with trans fatty acids and high amounts of sodium.

The sugar side

The guideline writes that the intake of free, that is added, sugar should stay below 10 percent of total energy, that this is about 50 grams for a person taking in 2000 kcal a day, and that going below 5 percent can provide further benefit.

A cafe cup can use up a large part of that share on its own. The decision is not to ban the cup but to think of it together with the rest of the day. When a second sweetened drink is added on the same day, the share is used twice.

The share of caffeine

The amount of caffeine changes with the kind of coffee, the roast and the brewing method: 50-300 mg in 240 mL. Brewed tea carries less, 15-50 mg in 240 mL. For adults it is recommended that the daily intake not go above 400 mg.

How a cafe routine is built

Three decisions are enough in practice: the size of the cup, what is added on top, and whether the sweet is a separate item that day. When all three grow at once the difference multiplies; when one is held fixed the others come into measure on their own.

Taking that decision again every time at a cafe you go to often is tiring; an ordering routine set up once makes the job easier.
