How do you choose at the canteen?

The menu is fixed, the plate is not. The measure of the ladle, why the second dish counts as two portions, and how different plates come out of the same menu.

At a canteen the choosing is done not from the menu but from the plate. Where you order, you decide what will be eaten; at a canteen the menu is fixed and the decision comes down to which dishes are taken from that same menu, and in what amounts.

Below we look at how many dishes the menu is built from, how the ladle decides the portion, why the second dish counts as two portions, how different plates come out of the same menu, and how seeing the menu in advance changes the day.

No ordering, but serving

At a restaurant the kitchen sets the portion but you make the choice. At a canteen the list to choose from is narrow, but how many dishes make up your plate and how much you take from each is up to you.

So a canteen is not a question of reading a menu but of building a plate. We covered reading a menu itself in this guide.

How many dishes the menu is built from

TÜBER, Türkiye’s national dietary guideline, gives a clear frame for institutions: the number of dishes on lunch and dinner menus is planned to be at least four dishes, and variety from every food group is provided.

Four dishes usually consist of a soup, a main dish, a second dish and something to go alongside. If that structure is already built into the menu, the variety of the plate is built on its own.

The same section asks, where an institution provides the meal, for half the daily energy requirement to be met by it. So a canteen meal is not a small part of the day but half of it.

The ladle decides the portion

In serving, the measure is given not with scales but with a ladle, and the guideline has established that the ladles used in homes are not standard. It has defined the three ladles produced for institutions providing mass catering by their diameter and depth.

The measures are these: a very small ladle holds 60 milliliters, a small ladle 90 milliliters and a medium ladle 120 milliliters. One standard portion of a dried legume dish is two small ladles, that is 130 grams.

On the rice side one level medium ladle corresponds to 90-110 grams, and for pasta to 75 grams. We explained the ladle itself separately in this tip.

Why the second dish counts as two portions

This is the guideline’s most practical finding for canteens: at home or in institutions providing mass catering, the rice or pasta served as a second dish after main dishes such as meat, vegetables or dried legumes is equal to two standard portions.

So the second dish is twice the amount put on as a side. The rice taken along with the main dish may look like a single item on the plate, but on the grain side it takes up room for two portions.

So when the second dish is taken, the measure is set with the ladle itself. The difference between a level ladle and a heaped one corresponds to a marked difference in amount in the same dish.

Different plates from the same menu

A fixed menu does not mean everyone will take the same plate. Out of the same four dishes, a plate that brings the soup and the vegetable dish forward can come out, and so can one that brings the second dish forward.

What makes the difference is not the number of dishes but their weight. The salad and vegetable side carries volume; the grain side enlarges the measure fast.

The difference between two plates from the same counter is usually in the second dish. The soup and vegetable side fills the plate while the grain side quietly enlarges the measure, and that difference is not easy to tell apart by eye.

Seeing the menu in advance

Most canteens announce their menu weekly, and that is enough information to plan the rest of the day. Someone who knows what is coming at midday builds the evening accordingly.

The decision is made in the morning, not while waiting in line. A decision made in the queue is shaped by the empty space on the tray and by the hunger of the moment.

If there is soup on the menu, the first dish of the day is built there; if not, salad does the same job. Which one is brought forward varies with what the main dish is that day.

Snacks and fluid

The guideline defines the number of meals for workers as three main meals and one to three snacks. The function of a snack is to prevent overloading at lunch.

On the fluid side the recommendation is clear too: alongside water, ayran, milk, weak tea, herbal teas and watery foods such as soup contribute to the daily fluid. We covered the whole arrangement at work in this tip.

A snack does not have to be bought out. A piece of fruit or a handful of nuts brought with you makes looking for a ready option at the tea break unnecessary.

The part that spills outside the canteen

The size you get used to at the canteen becomes the reference for the plate at home over time. So holding the measure is not only a problem of working hours.

If there is a group with no counterpart on the menu that day, the gap is closed at the evening table. The side that is usually left incomplete is vegetables and fruit.
