Heaping spoon or level spoon?

Unless a recipe says otherwise, a spoon measure is taken as level. In powdery ingredients the difference between heaping and level can amount to skipping up a spoon size.

Unless a recipe says otherwise, a spoon measure is taken as level; a heaping spoon also counts the part that rises above the rim, and in powdery ingredients that difference can amount to skipping up a whole spoon size. The salt recommendation of TÜBER, Türkiye's national dietary guideline, shows this clearly: the daily maximum is given as one heaping teaspoon or one level dessert spoon. In other words, the same amount moves up a spoon size when the way of filling changes.

How big is the difference?

The salt example tells you the size of the difference in one sentence: a small spoon filled heaping carries the same amount as the next size up filled level. That means the way of filling decides as much as the spoon itself.

The difference grows when the ingredient is fine-grained and light. Flour, salt, sugar, baking powder and spices form a clear peak above the spoon when taken heaping; with coarse-grained or sticky ingredients the peak stays smaller.

So two different errors can magnify each other in the same recipe. When both the salt and the baking powder are taken heaping, the two deviations lean the same way and the result changes more than you would expect from a single ingredient.

Why is level taken as the basis?

In portion definitions the measure is given as level too. While defining ladle measures, the same source writes one standard portion of rice as one level medium ladle and one standard portion of rolled oats as one level very small ladle; the word "level" appears inside the definition.

The reason for this is repeatability. A level measure is limited by the volume of the container and gives the same result whoever fills it; a heaping measure depends on how much the hand piles up and varies both between two people and between two attempts by the same person.

This difference comes out when you pass a recipe on to someone else as well. A recipe written in level measures gives the same result in another kitchen, while a recipe written in heaping measures also requires the hand of the person who wrote it; yet a recipe can only travel if the measure is independent of the person.

How do you level a spoon?

After dipping the spoon into the ingredient and filling it, running the back of a knife or the edge of the package across the rim of the spoon to take off the excess is enough. The excess falls back into the container and what stays in the spoon stays level with the rim.

Filling the spoon by pressing it into the ingredient is a separate mistake; compacted ingredients take up more room in the same spoon. A level measure means filling without pressing and then leveling off.

In which recipes does this difference change the result?

Baking recipes are the most sensitive; in ingredients used in small amounts, such as baking powder, baking soda and salt, the difference between heaping and level directly changes how the dough behaves. If these recipes do not say which way the measure is taken, level is assumed.

In pot dishes the difference shows up more in the taste and can be corrected later. Even so, with ingredients such as salt, staying on the low side is easier than trying to take back the excess.

What can you do today?

While following a recipe this evening you can fill the spoon and level it once with the back of a knife; once the habit is set, that movement becomes part of taking the measure. Keeping a knife or a small spatula next to the spice jars you use often makes the step easier too.

Stating whether the measure is level or heaping when you write your own recipes is a lasting gain as well. When you make the same recipe a year later, you will not have to remember how you measured.

If you keep finding the same recipe too much or too little, looking first at how you take the measure is a way forward too. Without changing the recipe, just fixing the way you fill the spoon often corrects the result on its own.
