Why does the color matter when you fry potatoes?

Color is the visible counterpart of how hot the surface got and how long it stayed there. The guideline writes that temperature and time affect the compounds that form.

Color is the visible counterpart of how hot the surface got and how long it stayed there. TÜBER, Türkiye's national dietary guideline, writes that vegetables containing asparagine, such as potatoes, can form acrylamide when heated at high temperature, and that the cooking method, the temperature and the time affect this formation. If there is no thermometer in your hand, the only readable indicator is the color.
