How do you build a list of quick meals for tired days?
What you need on a tired evening is not a new recipe but a ready list. A guide to how twenty-minute meals are chosen.
What you need on a tired evening is not a new recipe but a list prepared in advance. What is lost at that hour is not so much time as the capacity to decide — and when there are three or four familiar options to hand, the deciding disappears too.
Below we look at the criteria the list is built on, which dishes suit it, the role of the stock in the cupboard, and how the list is updated.
The criteria the list is built on
The first criterion is time: dishes that do not go past twenty minutes. Once that limit is passed, cooking on a weekday evening usually does not happen.
The second criterion is the ingredients. The dishes on the list have to be built from items always present in the fridge and the pantry; a recipe that asks for a special ingredient does not suit a list.
The third criterion is the washing up. Dishes that cook in one pot or on one tray lighten what comes after the meal too.
Which dishes suit it
Egg dishes, pasta and grain-based plates, dishes built with tinned legumes and tray vegetables are the most frequent members of this list.
What they have in common is that they need no long preparation and mostly cook in one vessel. The number of ingredients is small too.
What goes alongside is kept simple as well: a bowl of yogurt, a few slices of vegetable or a salad. On a tired evening there is no need to weigh this; we gathered the defined form of the measure in the what a standard portion means guide.
The stock in the cupboard
The list only works when the ingredients are to hand. So the ingredients for the dishes on the list are kept as stock items.
Tinned legumes, eggs, pasta, tomato paste, olive oil and a few spices cover most lists. These keep for a long time and are independent of the shopping.
The rule for stock items is simple: they go on the list before they run out. An item written down once it is finished turns out to be missing on exactly the evening it is needed.
The role of the freezer
The fastest members of the list come out of the freezer. A dish divided into single-portion containers needs no preparation at all.
Frozen vegetables do the same job; they remove the washing and chopping step entirely. We covered the comparison with fresh in this article.
The share of the prep day
Washed vegetables, boiled grains and soaked legumes build the same dish in half the time. The answer to tired evenings is largely prepared at the weekend.
We gathered the details in the weekly prep day guide.
How many items the list should have
Four to six dishes is enough for most households. A longer list brings a load of choice and defeats the purpose of the list.
Writing the list on the cupboard door or in your phone helps too. A list you try to keep in your head is not remembered at exactly the tired moment.
The balance with delivery
The real function of this list is to make ordering in an option. In a decision with no alternative there is no choosing to speak of.
You can still order; the difference is that the decision was made deliberately. Moving the box onto a plate also turns that meal into a normal meal.
Not cooking is an option too
On some evenings not cooking at all is the right decision. A table built from bread, cheese, eggs and a salad is a full meal too.
Counting such meals as a shortcoming produces unnecessary pressure. If three items are there together, the meal has been built; it does not have to have been cooked.
The same approach holds for leftovers. A reheated portion is both faster and cheaper than cooking a new dish.
Where the tiredness comes from
Part of evening tiredness comes from the meal routine during the day. When lunch is built incomplete, hunger and tiredness arrive together in the evening.
Fluid works in the same direction. On a day with little water, the flatness felt in the evening gets mixed up with hunger.
So a list of quick meals is not a solution on its own; it works together with the rest of the day.
Still, the most concrete gain is here: when there is nothing left to decide, the effect of tiredness on the menu largely disappears too.
How the list is updated
When the same four dishes repeat for months the list becomes boring and gets abandoned. Changing one item each month prevents that.
The same three criteria are kept while changing it: time, ingredients and washing up. A dish that does not meet those criteria belongs not to the list but to the weekend.
Trying a new dish once at the weekend before taking it onto the list is a good habit too. A recipe tried for the first time on a tired evening usually gets left half done.
In short: choose four to six twenty-minute dishes, make their ingredients stock items, write the list somewhere visible and renew it once a month. We covered menu building in this guide.
