How are canning, pickles and brine managed at home?

What decides in the jar is not the recipe but the environment. It covers the work of salt, acid and heat, the choice of container and at which sign a product is not used.

What decides in home canning, in pickles and in brine is not the recipe but the environment: what condition salt, acid and heat set up inside the jar. TÜBER, Türkiye's national dietary guideline, brings one sentence to the front in this area: preserves made under unsuitable conditions are among the known carrier foods of the bacterium that causes botulism. That is why home canning is not an item that can be judged by tasting it.

Below we cover what salt, acid and heat do, why we do not give a time and temperature table here, how the jar is prepared, what the storage condition is set by, and at which signs the product is not used.

The home kitchen's share

The guideline writes that 20 to 40 percent of foodborne illness comes from foods prepared at home. This does not mean the home kitchen is risky; it means the rules hold not only in the factory but at home too.

The same section lists the reasons as well: insufficient cooking, unsuitable time and temperature practices, contamination of tools and equipment, contamination of preparation areas, and insufficient personal hygiene.

What salt, acid and heat do

The three do the same job by different routes: making the condition inside the jar one in which microorganisms cannot multiply. Salt binds the water, acid lowers the acidity of the environment, and heat puts the product and the container through a process.

The role of temperature is given with numbers in the guideline: the growth of microorganisms slows or stops below 5 degrees and above 60 degrees. The zone in between is the zone in which foods should not be left waiting for long.

These three factors do not take each other's place. Raising the salt does not stand in for the heat treatment, and adding acid does not stand in for the salt; they work together.

Why there is no time and temperature table here

In home canning the processing time and temperature change with the product, the volume of the jar, the acidity and the method. An official Turkish source giving these values could not be reached while this text was being prepared.

Writing an estimated time produces a predictable harm. That is why no minute, no degree and no acidity threshold is given here; if you need them, you should take them from an official guide that describes the method or from a food engineer.

The jar and container side

The cleanliness of the jar and the lid is half the work. The first of the guideline's food safety principles is cleaning, and it covers the tools and equipment used being cleaned and disinfected before and after use.

The material of the container decides too. It is written separately that acidic foods such as lemonade, tomato sauce or salad dressing should not be prepared or cooked in aluminum and copper containers, and that containers whose enamel has come off should not be used.

The containers of packaged foods that have been bought should not be used for another purpose either, for example for culturing yogurt or for storing food.

At which signs it is not used

The guideline lists the same signs for preserves both bought and held at home: those with bulging bottom and top lids, with a damaged tin, or with a loosened or dented lid are not taken. Products that have bulged, whose packaging has broken down or that have leaked are definitely not used.

This decision is not made by tasting. In botulism the symptoms appear 18-36 hours after consumption and affect the nervous system; double vision, blurred vision, muscle weakness and difficulty in swallowing and breathing can be seen. A jar that is in doubt is not opened and not eaten.

After it is opened

After canned foods are opened and used, the food left behind is kept in a suitable container and in the fridge. Leaving the product in its own tin falls outside this rule.

In pickle and brine jars the real issue is the product staying under its own liquid, and the cleanliness of the spoon that goes into the jar; we covered this in a separate piece.

The salt side

Pickles, tomato paste, tarhana (a fermented soup base) and brined vine leaves prepared at home are high in salt. The guideline asks that using large amounts of salt during preparation be avoided and that their consumption be watched.

To lower the salt content of brined products, processes such as washing in water and soaking in water are recommended. But because salt also works as a preservative, lowering the salt at will at the setting-up stage is a separate decision.

In infants and small children

The guideline asks that no salt be added to infants' foods in the first year of life and, because they are high in salt, puts canned and brined products among the items it lists for this age.

Not giving honey to children under one year of age is also written separately, because of the spores of the same bacterium. Home canning is not an option at the table of this age group.

In short: set the jar up clean, keep acidic foods away from aluminum and copper containers, leave the product under the liquid, throw out a bulging or leaking jar without tasting it, and take the time and temperature values from a source rather than from a guess.
