How does cross-contamination happen on a board?
Raw meat, poultry and seafood carry microorganisms that can pass to other foods during preparation and storage. That transfer does not need contact; being placed on the same surface one after the other is enough.
What raises the risk is what the second ingredient is. An ingredient that goes from the board into the pot meets heat while cooking; a cucumber that goes into a salad does not. So the problem is not that the board gets dirty but that something to be eaten raw is chopped after a dirty board.
The official guideline explicitly counts contamination of equipment among the main causes of foodborne illness, and names the knife and the cutting board. In other words, this is a route that is known but neglected in the kitchen.
Why is rinsing with water alone not enough?
Cold water takes the visible residue off the surface; it does not take off the fat and protein residue. The guideline's wording is clear: all surfaces and utensils that come into contact with meat and fish, raw chicken above all, must be washed with plenty of hot water and detergent, or disinfected, after every use.
The same rule covers your hands. Reaching for a drawer handle, a tap or the salt shaker after touching raw food without washing your hands sets up the same transfer, however well you washed the board.
The knife is often forgotten too. Washing the board and carrying on with the same knife largely undoes the work you have done; the knife is washed together with the board.
How do you set the order if you have one board?
Buying two boards is not compulsory; changing the order does largely the same job. What will be eaten raw is chopped first: salad, fruit, herbs. Raw meat, chicken and fish are left to the end.
When that order is set, the board is washed only once, at the end of the work, and nothing to be eaten raw has been placed on a dirty surface in between. When the order is reversed, a full wash is needed between every step.
If you are moving to two boards, making the split visible helps. A different color, a different size or a mark on one edge makes it easier to pick the right board when you are in a hurry; leaving the split to memory does not work on a tired evening.
Which surfaces besides the board get forgotten?
The drying cloth comes first among them; the guideline names it in its list of equipment that gets contaminated too. Wiping the board and then the counter with the same wet cloth spreads not cleanliness but contamination.
The counter itself is a surface as well. Raw chicken set down on the counter for a moment as it comes out of the package carries that spot forward to the next job. Opening the package straight onto the board or onto a tray removes that trace.
The sink is another forgotten place. Washing raw chicken in the sink spreads the water, and the surface with it, around the area; whereas cooking already does the necessary work with heat.
What can you do today?
Set one of the boards you already have aside for raw meat and keep it apart from the others. You do not need to buy anything new; if there is already more than one board in the kitchen, the job amounts to a change of place.
If you have one board, change the order this evening: salad first, then meat. And take the knife into the hot soapy water together with the board. Both of these steps can be applied without buying anything for the kitchen.
