How much is a pinch?

Why does a pinch have no definition?

TÜBER, Türkiye's national dietary guideline, defines the tools used to describe a portion one by one: the cup, the drinking glass, the bowl, the plate, the spoon and the ladle. A pinch is not on that list, because a pinch is not a tool but a motion made with the hand itself.

The result of that motion depends on two variables. How many fingers are used and how far the fingers are opened; both change from person to person, and in the same person from one moment to the next.

The third variable is the ingredient itself. Fine-grained salt does not hold the same volume as pul biber (Turkish red pepper flakes) or dried mint; the same motion gives a different amount depending on the ingredient.

How much do even the named measures vary?

The guideline's own measurement shows that the problem is not limited to the pinch. Çay bardağı, the Turkish tea glass sold here, ranges from 85-165 mL, water glasses from 200-560 mL, soft drink glasses from 160-490 mL and bowls from 130-600 mL.

The spoon is not fixed either. The volume of a tablespoon has shrunk compared with thirty-five or forty years ago; it has come down from 15 mL to 10-12 mL. So even the phrase "one tablespoon" may not describe the same thing to the person writing a recipe and the person reading it.

The conclusion the guideline draws from this measurement is that a portion cannot be described accurately with non-standard tools. This is why the guideline defines the cup, the 240 mL measure, as the basic tool.

Why does the gap grow with salt and spices?

The smaller the amount, the larger the proportional difference. In a glass of flour a half-glass deviation is seen at once, but in a pinch of salt an amount that has doubled cannot be told apart by eye.

The second reason is that it cannot be undone. Salt that goes into the pot cannot be taken out; a spice added in excess affects the whole dish. That is exactly why this is the place where uncertainty costs the most.

The third has to do with repeatability. A dish not turning out the same each time usually comes from the uncertainty kept in the salt and the spices; with the ingredients the same, this is what changes the result.

How do you fix your own pinch?

Measure it once. Take a pinch with the motion you are used to and empty it into a measuring spoon; see which spoon it matches. This single measurement defines your own pinch and leaves no need to guess again.

Write the result in the margin of the recipe. When your own recipe book holds the spoon equivalent instead of "a pinch", the dish comes out the same every time and someone else can get the same result too.

You need to do this separately for the spices you use often, because when the grain size changes the volume changes with it. A measurement done for three or four spices covers most of the kitchen.

What can you do today?

Take the salt shaker and the two spices you use most; from each, take a pinch the way you are used to and empty it into a measuring spoon. Write the equivalent on the jar or in your recipe book.

At the next meal, use that spoon instead of the pinch and compare the result. If you feel a difference, adjust the measure once to your own taste and note the new value; the point of measuring is not to obey the recipe but to make your own measure repeatable.
