What temperature should the fridge be set to?

The numbered dial does not show degrees. The target is for what you keep cold to stay below four degrees; the only way to know that is a thermometer placed inside the fridge.

There is no single dial setting for a refrigerator; the target is for food kept cold to sit in an environment below 4 °C and for the freezer to be at -18 °C or lower. The numbered dial on the fridge does not show degrees; it only raises and lowers the strength of the cooling. So the real question is not what number to turn the dial to, but how many degrees it actually is inside the fridge.

Why does the dial not tell you the temperature?

On most refrigerators the control dial is numbered from one to five, and those numbers are not temperatures but settings that decide how much the compressor runs. The same setting produces a different inside temperature depending on how full the fridge is, how often the door is opened and how warm the kitchen is.

The practical result is this: a fridge left on the setting it came with out of the box is not equally cold in summer and in winter. Setting the dial once and forgetting it does not mean you have set the temperature.

On some newer models a display showing degrees takes the place of the dial; in that case the number on the display is a target, not a measurement. The only thing that shows whether the fridge is really at that temperature is an independent thermometer placed inside it.

What is the target temperature?

TÜBER, Türkiye's national dietary guideline, says that foods eaten cold or kept cold should be held in environments below 4 °C. The storage temperatures the same source gives by food group also sit around that range: red meat and poultry at 0-4 °C, ground meat at 0-2 °C, milk and dairy at 4-6 °C, fruit and vegetables at 0-12 °C, and frozen products at -18 °C and lower.

In the same source, the refrigerator environment is given as 4-4.5 °C where thawing frozen food is described. So for the cooling compartment there is not a single number but a narrow range aiming below four degrees; the upper limit wanted for meat and the range given for dairy stand side by side inside the same fridge.

Is there a single temperature inside the fridge?

There is not. Because cold air spreads by circulating inside the fridge, the areas near the door meet room air at every opening and become the most variable region. So even if the fridge's average meets the target, some of its areas can stay above it.

That is where measuring gets its meaning: instead of looking at a single point, you need to look at the area where perishable foods sit. This difference between regions is also why meat and dairy belong on the inner shelves rather than in the door.

How full the fridge is and how often the door is opened widen that difference too. A fridge on the same setting may no longer repeat its earlier reading once it is filled after shopping, or once it is opened again and again during meal prep.

What does a thermometer make visible?

In places that serve food to large numbers, cooler temperatures are required to be checked and recorded regularly, and the thermometers themselves to be calibrated at regular intervals. At home there is no such requirement, but the logic is the same: a temperature that is not measured is a temperature that is assumed.

A simple thermometer placed inside the fridge shows once what the dial setting is worth, and that knowledge lasts. If the reading is above the target the setting is raised; if the reading is very low and the vegetables are freezing, the setting is lowered; in both cases the decision is made with a number, not a guess.

What can you do today?

You can put a thermometer on the shelf you use most and check it a few hours later; taking the reading in the morning, before the door has been opened, gives a more consistent result. If you have changed the setting, repeat the reading a day later, because the fridge does not settle into the new setting right away.

Taking the reading once and noting what the setting is worth is enough as well; when the kitchen warms up in summer or when you have filled the fridge, repeating the same reading is easier than guessing at the setting again.
