How do you prepare a big table in advance?

Why is the day overloaded?
The trouble with a day with guests is usually not how hard the dishes are but that all of them pile into the same stretch of hours. Even if four of five dishes are easy, when all four go into the same two hours the kitchen turns into a single-person line. The burner, the oven and the counter cannot cover more than one job at a time.
The second squeeze happens on the serving side. Even when the dishes are done, setting the table, getting the dishes out and finding the serving spoons all land at the same moment. Because these jobs are short but cannot be postponed, they surface exactly when the guests arrive.
Which item falls on which day?
What can be finished a day ahead is clear: cold mezes, salad dressing, pickles and similar items, the preparation for pastries, the soup itself, and the initial preparation of dishes that will go into the oven. The next day these only move from the container to the plate, or go into the oven.
Bringing the same-day list down to a single item is a good target: usually the main dish. There is also a salad that has to be freshened at the last moment, and if its ingredients are already chopped that takes a few minutes to put together. Everything else being finished a day ahead takes that day out of being a kitchen day.
TÜBER, Türkiye's national dietary guideline, draws a line during preparation: potentially hazardous foods such as meat, milk and eggs should be kept out of the fridge for no more than two hours during the preparation stage. At a big table the number of ingredients waiting on the counter grows, so that limit is easily passed; taking an ingredient out when its turn comes is safer than lining them all up on the counter from the start.
The table itself is preparation too
Setting the table and choosing the dishes and serving spoons appear on hardly any list; yet in time they take as long as a dish. These can be done a day ahead: the dishes are lined up on the counter in order and it is settled which dish goes into which one. On its own this removes the most chaotic half hour of the day.
Making room in the fridge goes on the preparation list as well. Dishes cooked in advance take up space, and the ingredients arriving on the day of the guests need somewhere to go too. Emptying the fridge a day ahead directly reduces the number of containers left waiting on the counter that day.
How long can the dishes stand on the table?
At a big table dishes stay on the table for a long time, and the guideline gives a limit for this: dishes to be served hot should be kept below 63 °C for no more than two hours, and cold dishes above 8 °C for no more than four hours. It is written in the same place that if dishes are to be kept hot, the holding temperature should be above 65 °C and for no more than three hours.
The practical meaning of this is not to bring everything to the table at once. Leaving the dish to be served in the second round in the oven or in the fridge both keeps its temperature and keeps you within that limit. Nor does clearing the leftovers wait until after the table breaks up: the guideline says cooked dishes should not be left standing on the counter or the stove for more than two hours.
What can you do today?
For the day guests are coming you can write the list not by dishes but split into two columns: what will be finished the day before and what will be done on the day. If the second column does not come down to a single item, taking one dish off the menu is the easiest decision that saves the day. Setting aside the dishes and serving spoons a day ahead goes on the list too. And you can plan to bring the dishes to the table in two rounds rather than all at once.
