Cook in the pressure cooker

Inspired by Georgian cooking's generous use of lentils, this baby purée is made by softening red lentils and courgette in the pressure cooker in just a few minutes. With no added sugar and no nuts, it is a safe option among a baby's first solid foods.
Put the rinsed lentils, chopped courgette and water into the pressure cooker and close the lid. Cook for 6 minutes once it reaches pressure, then turn off the heat.
Once the pressure has released on its own, blend the lentils and courgette with the olive oil until completely smooth.
Serve the purée once it has cooled to a warm temperature suitable for a baby's spoon.
Always rinse the lentils a few times before cooking; unrinsed lentils can foam up and clog the pressure cooker's valve.
